Generally dark in color, it is distinguished by a strong and powerful aroma. On the palate, it develops sweet and woody notes that can evolve into a marked astringency, or even a slight bitterness, typical of this characterful honey. Its crystallization can be rapid or slow, sometimes irregular or coarse, without altering either its quality or its unique flavor.
