A polyfloral spring honey harvested in early May in Burgundy, in the Nivernais plain. This honey traditionally marks the beginning of the beekeeping season. Unpasteurized, it is extracted by centrifugal force at hive temperature (approximately 34°C), which preserves all of its natural qualities. It crystallizes quickly and naturally, sometimes displaying a "marbled" crystallization, a sign of exceptional quality.
